Fermentation on skins for 38 days has extracted the more complex tannins from the skins and seeds, in a technique called extended maceration. The result is a wine with great depth of structure and mouthfeel, delightfully complex with wonderful savoury flavours.
Estate grown, with a whisker more Shiraz than Cabernet Sauvignon, this wine is perfectly paired with a traditional lamb roast and baked vegetables or a succulent rare kangaroo fillet. These and other great dishes will prove this wine to be – A wine made for eating.

For 30 years the Hastwell and Lightfoot families have worked together to handcraft a range of wines from their 16 hectares of vines. These vines, planted in 1988, rest on deep sand; a product of tens of millennia of westerlies spreading mantles of coastal Semaphore sands into the valleys, building up on the ridges creating the region’s sand dunes.
These ‘Sands of Time’ give their name to the Hastwell & Lightfoot’s flagship Shiraz. Shiraz has an enviable tradition in McLaren Vale, and this is reflective in the Hastwell & Lightfoot Sands of Time Shiraz. As well as the traditional Shiraz, Hastwell & Lightfoot produces premium Cabernet Sauvignon and Cabernet Franc
